How to make yummy LEMON CURD SPREAD (it's lemon pie in a jar).



Lemon curd spread is one those versatile foods that are wonderful to keep on hand in your fridge. This recipe is my favorite. Unlike others, this one uses a bit more sugar and it leaves out lemon zest, so what you end up with is a yummy spread that tastes like lemon pie in a jarIt's delicious as a spread, or it can be warmed and drizzled like a syrup. (If you happen to have backyard chickens and a surplus of eggs, this is a delectable way to use extra eggs). Regardless of how you get your eggs, once you make lemon curd spread, you'll be amazed at how easy and low cost this treat is to make. So gather around and let's get started!

INGREDIENTS

1/2  cup fresh-squeezed lemon juice (about 2 large lemons)
1  1/2 cups sugar
8 egg yolks
8 tablespoons butter, cut into bits 


INSTRUCTIONS

STEP 1: Place the lemon juice and sugar in a medium saucepan and heat over medium heat until the mixture simmers. Reduce heat to low.

STEP 2: While the mixture simmers, place the egg yolks in a bowl and beat or whisk until creamy and smooth. Check the juice and sugar mixture. When the sugar is dissolved and the mixture looks like a clear liquid, remove the pan from the stove and pour about half of the mixture into the bowl of egg yolks, whisking steadily as you pour.

STEP 3: Return everything to the pan, place back on the stove and allow the mixture to continue cooking over low heat. Stir constantly until the mixture thickens so it coats the back the back of a spoon.

STEP 4: Stir in the butter, one bit at a time. Remove the pan from heat and immediately pour into a pint size jar, or another container. Allow to cool to room temperature. Store in the refrigerator. Use within a couple weeks.

WAYS TO USE LEMON CURD SPREAD

Spread it on...toast, pancakes, or inside crepes.

Serve as a topping on... muffins, cakes, and other desserts, or warmed and drizzled over fruit salad or on waffles.

Use as a filling in...cupcakes, hand pies, or between cake layers.
